Steps
1. Soak chickpeas in water overnight. Drain and rinse.
2. In a food processor, blend chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, salt, and pepper until a coarse mixture forms.
3. Shape mixture into small patties and fry in olive oil until golden brown.
4. Warm pitas in a pan or microwave.
5. Fill pitas with falafel patties, tomato slices, cucumber slices, and drizzle with tahini sauce.
6. Wrap and serve warm.
