Mixed Berry Fruit Gelato

A creamy and refreshing fruit gelato bursting with the natural sweetness of mixed berries. This single-serving recipe offers a delightful balance of tartness and smooth texture, perfect for a light dessert.

Steps

1. Puree the mixed berries and lemon juice in a blender until smooth. 2. In a small saucepan, heat the milk and cream over medium heat until warm but not boiling. 3. In a bowl, whisk the egg yolk with sugar until pale. 4. Slowly pour the warm milk mixture into the egg yolk mixture, whisking constantly. 5. Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens enough to coat the back of a spoon. 6. Remove from heat and mix in the berry puree. 7. Let the mixture cool to room temperature, then refrigerate for at least 2 hours. 8. Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions until smooth and gelato-like. 9. Transfer to a container and freeze for an additional 1 hour before serving.
