Steps
1. Preheat the oven to 375F (190C).
2. Cut bell peppers in half and remove the seeds.
3. In a bowl, add breadcrumbs, Parmesan cheese, olive oil, onion, carrot, celery, egg and garlic.
4. Mix until the vegetables are well combined.
5. Place the bell pepper halves on a baking dish and stuff them with the prepared mix.
6. Bake for 25-30 minutes until golden brown.
7. Serve warm.
