
Steps
- In a medium pan, heat the olive oil over medium heat.
- Add the rice and toast it for about 2 minutes until slightly golden.
- Pour in the vegetable broth or water and bring to a boil.
- Once boiling, add the mixed vegetables, salt, and pepper. Stir well.
- Reduce heat to low, cover, and let simmer for about 15 minutes until the rice is cooked and the liquid is absorbed.
- Remove from heat, stir in the cheese until melted, and let sit for a couple of minutes.
- Serve warm and enjoy your cheesy vegetable rice!
