Quinoa and Vegetable Pulao

Steps

1. Rinse quinoa thoroughly under running water and drain. 2. Heat oil in a pan over medium heat. Add cumin seeds and let them splutter. 3. Add chopped onions and garlic; sauté until golden brown. 4. Add diced carrots, peas, and bell peppers; cook for 3-4 minutes. 5. Stir in chopped tomato, turmeric, garam masala, and salt. Cook until tomatoes soften. 6. Add quinoa and water; bring to a boil. 7. Reduce heat to low, cover, and simmer for 15 minutes or until quinoa is cooked and water is absorbed. 8. Turn off heat and let it rest covered for 5 minutes. 9. Fluff the pulao with a fork and garnish with fresh coriander before serving.
