
Steps
- In a pot, sauté garlic and ginger in sesame oil.
- Add vegetable broth and bring to a simmer.
- Add carrots, bell peppers, and mushrooms. Cook for 3-4 minutes.
- Cook ramen noodles separately according to package instructions.
- Season the broth with soy sauce, salt, and pepper.
- Add spinach and green onions, cook for another minute.
- Place cooked noodles in a bowl and pour the vegetable broth over.
- Garnish with sesame seeds and torn nori before serving.

- 2 cups vegetable broth
- 1 carrot, julienned
- 1/2 red bell pepper, thinly sliced
- 1/2 yellow bell pepper, thinly sliced
- Handful of spinach
- 1/4 cup sliced mushrooms
- 1 green onion, chopped
- 1 clove garlic, minced
- 1 tsp ginger, grated
- 1 tbsp soy sauce
- 1 tsp sesame oil
- Salt and pepper to taste
- Sesame seeds and nori for garnish
