Steps
1. Preheat your oven to 375°F (190°C).
2. In a food processor, combine the mixed nuts, breadcrumbs, Parmesan cheese, salt, and pepper. Pulse until finely chopped.
3. Pat the chicken breast dry and brush it with olive oil on both sides.
4. Coat the chicken breast with the nut mixture, pressing firmly to adhere.
5. Place the coated chicken on a baking sheet lined with parchment paper.
6. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through (internal temperature of 165°F or 75°C).
7. Remove from the oven and let it rest for a few minutes before slicing.
8. Serve garnished with fresh herbs, if desired.
