1. Rinse the rice under cold water until the water runs clear. Cook it according to package instructions and set aside. 2. In a large skillet, heat the olive oil over medium heat. Add the diced chicken breast and season with salt, pepper, and garlic powder. Cook until browned and cooked through, about 5-7 minutes. 3. Add the bell peppers, broccoli, and carrots to the skillet. Stir-fry the vegetables for about 3-4 minutes, until they are tender but still crisp. 4. Stir in the cooked rice and soy sauce, mixing everything together well.
