Steps
1. Heat olive oil in a skillet over medium heat. Add the diced potatoes and cook until golden brown and crispy, about 8-10 minutes, stirring occasionally.
2. Add minced garlic and continue cooking for 1-2 minutes until fragrant.
3. Push the potatoes to one side of the skillet and add the ground pork. Cook until browned and fully cooked, about 5-7 minutes.
4. Stir in the diced tomato and cook for an additional 2-3 minutes until softened.
5. In a separate bowl, beat the egg with a pinch of salt and pepper. Pour it over the pork and vegetable mixture in the skillet, stirring gently to scramble the egg until just set.
6. Serve hot, garnished with fresh parsley if desired.
