Steps
1. Heat olive oil in a skillet over medium heat and brown the chicken drumstick on all sides for about 5 minutes.
2. In the slow cooker, combine the browned chicken, sliced radish, diced shallot, minced garlic, and thyme.
3. Pour in the chicken broth and season with salt and pepper.
4. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and fully cooked.
5. Remove the chicken, shred the meat, and return it to the soup.
6. Serve hot, garnished with fresh herbs if desired.
