Spiced Chickpea and Spinach Stuffed Sweet Potato

A hearty vegetarian main dish featuring roasted sweet potato filled with a warm, spiced chickpea and spinach mixture. It's flavorful, nutritious, and perfect for a wholesome meal.

Steps

1. Preheat the oven to 400°F (200°C). 2. Prick the sweet potato all over with a fork and place it on a baking sheet. Roast for 45 minutes or until tender. 3. While the sweet potato is roasting, heat olive oil in a skillet over medium heat. 4. Add minced garlic and sauté for 1 minute until fragrant. 5. Add chickpeas, cumin, smoked paprika, chili powder, salt, and pepper. Cook for 5 minutes, stirring occasionally. 6. Add chopped spinach and cook until wilted, about 2 minutes. 7. Remove the sweet potato from the oven and let it cool slightly. Slice it open lengthwise and gently mash the inside with a fork to create a cavity. 8. Spoon the spiced chickpea and spinach mixture into the sweet potato. 9. Top with a dollop of yogurt if using, and garnish with fresh cilantro. 10. Serve warm and enjoy!
