Spiced Soya Chunk and Vegetable Stir-Fry

A hearty and nutritious stir-fry combining tender soya chunks with crunchy cabbage, cauliflower, and potato, seasoned with aromatic spices for a flavorful vegetarian meal.

Steps

1. Soak soya chunks in hot water for 15 minutes, then drain and squeeze out excess water. 2. Heat oil in a pan over medium heat. Add cumin seeds and let them splutter. 3. Add chopped onion and green chili; sauté until onions turn translucent. 4. Add diced potato and cauliflower florets. Cook for 5-7 minutes until slightly tender. 5. Add shredded cabbage and sauté for another 3 minutes. 6. Add turmeric, coriander powder, garam masala, and salt. Mix well. 7. Add soaked soya chunks and stir to coat with spices. 8. Cover and cook for 5 minutes, stirring occasionally, until vegetables are cooked through. 9. Garnish with fresh coriander leaves and serve hot.
