Steps
1. Rinse quinoa under cold water.
2. In a small pot, combine quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed.
3. While quinoa cooks, heat olive oil in a pan over medium heat.
4. Add minced garlic and sauté for 1 minute until fragrant.
5. Add diced tomatoes and cook for 3-4 minutes until slightly softened.
6. Stir in chopped basil, salt, and pepper.
7. Fluff cooked quinoa with a fork and combine with tomato mixture.
8. Serve warm, topped with feta cheese if desired.
