Steps
1. Cut the crocodile fillet into bite-sized cubes.
2. In a bowl, mix olive oil, paprika, cayenne pepper, salt, and pepper. Add the crocodile pieces and toss to coat evenly. Marinate for at least 30 minutes.
3. While the meat is marinating, prepare the garlic aioli by combining mayonnaise, minced garlic, lemon juice, and a pinch of salt in a small bowl. Stir well and set aside.
4. Preheat a grill or grill pan over medium-high heat.
5. Thread the marinated crocodile pieces onto skewers.
6. Grill the skewers for about 3-4 minutes on each side until cooked through and slightly charred.
7. Serve the skewers hot, drizzled with garlic aioli and garnished with fresh parsley.
