
Steps
- Heat oil in a pan and sauté onions, garlic, ginger, and green chili until fragrant.
- Add diced tomatoes and cook until softened.
- Stir in turmeric, cumin, coriander, red chili powder, and salt.
- Push the tomato mixture to one side of the pan and crack eggs into the empty space.
- Scramble the eggs until cooked, then mix with the tomato mixture.
- Add cooked rice and gently combine everything together.
- Garnish with fresh coriander leaves before serving.
