
Steps
- Rinse the rice under cold water until the water runs clear, then soak for 15 minutes.
- In a pot, heat oil over medium heat. Add chopped onions and sauté until translucent.
- Add sliced mushrooms and cook until they start to brown, about 3-4 minutes.
- Stir in carrots, beans, and tomatoes, cooking for another 3 minutes.
- Add chopped green chili and salt, mixing well.
- Drain the rice and add it to the pot, stirring to combine all ingredients.
- Pour in 1 cup of water, bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes until rice is cooked.
- Fluff the rice with a fork and serve hot.

- 1/2 cup mushrooms, sliced
- 1/4 cup onion, chopped
- 1/4 cup tomato, diced
- 1/4 cup carrot, julienned
- 1/4 cup beans (any type)
- 1 green chili, chopped
- 1 tablespoon oil
- Salt to taste
- Water as needed
