Steps
1. Rinse the rice under cold water until the water runs clear, then soak for 15 minutes.
2. In a pot, heat oil over medium heat. Add chopped onions and sauté until translucent.
3. Add sliced mushrooms and cook until they start to brown, about 3-4 minutes.
4. Stir in carrots, beans, and tomatoes, cooking for another 3 minutes.
5. Add chopped green chili and salt, mixing well.
6. Drain the rice and add it to the pot, stirring to combine all ingredients.
7. Pour in 1 cup of water, bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes until rice is cooked.
8. Fluff the rice with a fork and serve hot.
