Steps
1. Preheat the oven to 375°F (190°C).
2. In a small skillet, heat olive oil over medium heat and sauté garlic until fragrant.
3. Add chopped spinach and cook until wilted, about 2 minutes.
4. Remove from heat, and mix in crumbled feta and oregano. Season with salt and pepper.
5. Slice a pocket into the chicken breast and stuff it with the spinach-feta mixture.
6. Season the outside of the chicken with salt, pepper, and a drizzle of olive oil.
7. Place the stuffed chicken breast in a baking dish and bake for 25-30 minutes, or until cooked through.
8. Let rest for 5 minutes before serving with a lemon wedge.
