Steps
1. Rinse the basmati rice until the water runs clear.
2. In a pot, combine the rice, coconut milk, water, cinnamon stick, cardamom pods, turmeric powder, and salt.
3. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes until the rice is cooked.
4. In a separate pan, dry roast the shredded coconut until golden brown.
5. Fluff the cooked rice with a fork, remove the cinnamon stick and cardamom pods.
6. Serve the rice topped with the toasted shredded coconut.
