A twist on traditional Sri Lankan hoppers, these coconut milk-infused pancakes are light and flavorful.

Steps

1. In a bowl, mix rice flour, coconut milk, water, salt, and sugar until smooth. 2. Heat a non-stick pan over medium heat and lightly grease with oil. 3. Pour a ladleful of the batter into the pan, swirling to spread thinly. 4. Cover and cook for 2-3 minutes until the edges lift off the pan. 5. Serve hot with your favorite toppings or curries.
