Lentil and Coconut Curry (Parippu Curry)

Steps

1. Rinse the red lentils under cold water until the water runs clear. 2. In a pot, heat the vegetable oil over medium heat. Add the mustard seeds and wait for them to splutter. 3. Add the chopped onion, garlic, green chili, and curry leaves. Sauté until the onion is translucent. 4. Stir in the turmeric and cumin powders, cooking for an additional minute. 5. Add the rinsed lentils and 1 cup of water. Bring to a boil, then reduce the heat and simmer for about 15 minutes, or until the lentils are soft. 6. Stir in the coconut milk and season with salt. Cook for another 5 minutes, allowing the flavors to meld. 7. Remove from heat and garnish with fresh cilantro before serving.
