Steps

1. Heat the vegetable oil on a griddle or large skillet over medium heat. 2. Add the chopped onions and minced garlic, sautéing until the onions are translucent. 3. Stir in the mixed vegetables and curry powder, cooking until the vegetables are tender, about 5 minutes. 4. If using, push the vegetables to one side of the pan, crack the egg into the pan, and scramble it until fully cooked. 5. Tear the paratha into small pieces and add to the pan, mixing everything together thoroughly. 6. Use a spatula to chop and mix the ingredients for about 2-3 minutes until well combined. 7. Season with salt to taste and garnish with fresh cilantro before serving.
