
Steps
- Preheat the oven to 200°C (400°F).
- Season the pork tenderloin with salt and pepper, then rub with vanilla extract.
- Heat olive oil in an oven-safe skillet over medium-high heat. Sear the pork on all sides until golden brown.
- Transfer the skillet to the preheated oven and roast for 15-20 minutes or until the internal temperature reaches 145°F (63°C).
- While the pork is roasting, prepare the salsa by mixing diced tomato and spring onions in a bowl. Season with salt and pepper.
- Once the pork is cooked, let it rest for 5 minutes before slicing.
- Serve the sliced pork topped with the fresh tomato and spring onion salsa, garnished with parsley if desired.
