Steps
1. Preheat the oven to 200°C (400°F).
2. Season the pork tenderloin with salt and pepper, then rub with vanilla extract.
3. Heat olive oil in an oven-safe skillet over medium-high heat. Sear the pork on all sides until golden brown.
4. Transfer the skillet to the preheated oven and roast for 15-20 minutes or until the internal temperature reaches 145°F (63°C).
5. While the pork is roasting, prepare the salsa by mixing diced tomato and spring onions in a bowl. Season with salt and pepper.
6. Once the pork is cooked, let it rest for 5 minutes before slicing.
7. Serve the sliced pork topped with the fresh tomato and spring onion salsa, garnished with parsley if desired.
