Steps

1. Preheat your oven to 375°F (190°C). 2. Slice the tops off the tomatoes and scoop out the insides, leaving a sturdy shell. 3. In a bowl, combine cooked quinoa, chopped spinach, feta cheese, minced garlic, olive oil, salt, pepper, and oregano. Mix well. 4. Stuff the mixture into each tomato, packing it tightly. 5. Place the stuffed tomatoes in a baking dish and drizzle a little olive oil over the top. 6. Bake in the preheated oven for about 20-25 minutes, or until the tomatoes are tender. 7. Remove from oven and garnish with fresh basil before serving.
