Steps

1. Preheat your oven to 375°F (190°C). 2. Cut the tops off the tomatoes and scoop out the insides, reserving the pulp. 3. In a bowl, combine the cooked quinoa, chopped spinach, feta cheese, garlic, olive oil, oregano, and the reserved tomato pulp. Season with salt and pepper. 4. Stuff each tomato with the quinoa mixture and place them in a baking dish. 5. Bake in the preheated oven for 20-25 minutes until the tomatoes are tender and the filling is heated through. 6. Garnish with fresh basil before serving.
