Steps
1. In a pan, heat vegetable oil over medium-high heat.
2. Add diced chicken, season with salt and pepper, and stir-fry until golden brown.
3. Add onion, bell pepper, broccoli, and pineapple. Stir-fry for 3-4 minutes until vegetables are tender.
4. In a bowl, mix soy sauce, ketchup, rice vinegar, and honey until combined.
5. Pour the sauce over the chicken and vegetables, then add the cornstarch mixture to thicken.
6. Stir well and cook for another 2-3 minutes until the sauce is glossy.
7. Serve hot, ideally over rice or noodles.
