- In a bowl, mix soy sauce, honey, sriracha, lime juice, salt, and pepper to create a marinade.
- Add the chicken cubes to the marinade, ensuring they are well coated. Let it marinate for at least 15 minutes.
- Preheat the grill to medium-high heat.
- Thread the marinated chicken and pineapple onto the skewers, alternating between them.
- Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
- Serve hot, garnished with lime wedges if desired.
