Preheat your oven to 180°C (350°F). Grease a muffin tray with oil. In a bowl, crack the egg and whisk it until well combined. Stir in the grated cheese, grated carrot, and diced ham until evenly mixed. Pour the egg mixture into the prepared muffin tray, filling each cavity about 3/4 full. Bake in the preheated oven for 20-25 minutes, or until the muffins are set and lightly golden on top. Let them cool for a few minutes before removing from the tray.
