Tomato Curry for One

This delicious tomato curry is a classic dish that is surprisingly simple to prepare. It has a wonderful depth of flavor and is perfect served with steamed rice.

Steps

1. Chop the tomatoes into small cubes. 2. Heat the vegetable oil in a pan over medium heat. 3. Add the cumin seed and let it cook for around 30 seconds. 4. Add the coriander powder, turmeric, bay leaf, salt, chilli powder and garam masala. Stir for around 30 seconds. 5. Add the chopped tomatoes to the pan and mix for around 1 minute until all the flavors are combined. 6. Cover and reduce to low heat and let it cook for around 10 minutes. 7. Once the tomatoes are cooked, serve with steamed rice.
