Vegetable and Meat Couscous with Raisins

Steps

1. Prepare the couscous by placing it in a bowl, pouring over 120ml boiling water, cover, and let it sit for 5 minutes. Fluff with a fork. 2. Heat olive oil in a pan over medium heat. Add chopped onion and garlic, sauté until translucent. 3. Add cubed meat, season with salt, pepper, cumin, and cinnamon, and cook until browned on all sides. 4. Add sliced carrots, diced zucchini, and chickpeas to the pan. Cook for 10 minutes until vegetables are tender. 5. Stir in raisins and cook for an additional 2 minutes. 6. Serve the meat and vegetable mixture over the fluffed couscous. 7. Garnish with fresh parsley before serving.
