Vegetable Frittata

Steps

1. Peel and grate the carrots. Dice the onion and potato. 2. In a large skillet, heat the olive oil over medium heat. 3. Add the onions and potatoes to the skillet and cook until they are softened and lightly browned. 4. In a bowl, beat the eggs with the milk. Season with salt and pepper. 5. Pour the egg mixture over the cooked onions and potatoes in the skillet. 6. Sprinkle the grated carrots evenly over the eggs. 7. Cook the frittata over medium-low heat until the edges start to set. 8. Place a lid or a plate over the skillet and carefully flip the frittata. 9. Cook for another few minutes until the frittata is fully cooked and set. 10. Remove from heat, let it cool slightly, and serve.
