Vegetarian Indian Rice Bowl

This is a flavorful and nourishing vegetarian rice bowl bursting with Indian spices and fragrant long grain rice. This dish is a delicious and healthy vegan alternative to a regular Indian meal.

Steps

1. Begin by cooking the rice. Rinse the rice 3-4 times to remove its starch. Heat 1 Tablespoon of oil in a pot and combine 1 cup of long grain rice, 3 cups of water, and salt to taste. Bring it to a boil, reduce the heat and simmer it for 15-20 minutes until all the water is absorbed. 2. Meanwhile, in a pan, heat 1/2 Tablespoon of oil and add the diced onions, carrots, and potatoes. Sauté them for 5 minutes until they are lightly browned. 3. Add the cumin powder, turmeric, coriander powder, garam masala, red chili powder and salt to taste. Stir them all together and sauté for another 3 minutes. 4. Add 1/4 cup of green peas and stir everything together. Cover the pan and let the vegetables cook for 8-10 minutes. 5. Crack two eggs onto the vegetables and let them cook for 5-7 minutes until they are cooked. 6. To serve, place a generous amount of cooked rice into a bowl and top it with the cooked vegetables and eggs.
