1. In a bowl, combine grated zucchini, flour, Parmesan cheese, egg, salt, and pepper. Mix well until a batter forms. 2. Heat olive oil in a non-stick skillet over medium heat. 3. Scoop tablespoon-sized portions of the batter into the skillet and flatten slightly to form fritters. 4. Cook for 3-4 minutes on each side until golden brown and crispy.
