Steps
1. Cut the chicken breast into thin strips.
2. In a bowl, lightly beat the eggs.
3. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
4. Add the chicken strips and cook until browned and cooked through. Remove from the skillet and set aside.
5. In the same skillet, add another tablespoon of vegetable oil.
6. Add the minced garlic and grated ginger, and cook until fragrant.
7. Add the beaten eggs and scramble until cooked.
8. Add the cooked chicken back to the skillet.
9. Slice the avocado and gently stir it into the skillet.
10. Season with salt and pepper to taste.
11. Cook for another 1-2 minutes until everything is heated through.
12. Serve hot and enjoy!
