Avocado & Spinach Stuffed Tomatoes

Cheesy, veggie-filled tomatoes that make a delicious meatless meal!

Steps

1. Cut off the top of the tomato, reserving. Scoop out the flesh of the tomato, reserving separately. 2. In a small mixing bowl, mash avocado and add in cooked spinach, vegan cheese, and seasonings. 3. Stuff tomatoes with avocado and spinach mixture. 4. Place stuffed tomatoes in a baking dish and brush the outsides with olive oil. 5. Bake in preheated oven at 350 F for 20 minutes, or until tomato is cooked and cheese is golden brown. 6. Enjoy!
