
Steps
- Cut off the top of the tomato, reserving. Scoop out the flesh of the tomato, reserving separately.
- In a small mixing bowl, mash avocado and add in cooked spinach, vegan cheese, and seasonings.
- Stuff tomatoes with avocado and spinach mixture.
- Place stuffed tomatoes in a baking dish and brush the outsides with olive oil.
- Bake in preheated oven at 350 F for 20 minutes, or until tomato is cooked and cheese is golden brown.

- 1 large ripe tomato
- 1/2 ripe avocado
- 1/4 cup cooked spinach
- 1/4 cup vegan cheese
- 1 tsp olive oil
- 1/8 tsp garlic powder
- Salt and pepper to taste
