Baked Oatmeal and Vegetable Breakfast

Steps

1. Preheat oven to 375°F. 2. Grease an 8-inch square baking dish. 3. Heat 1 teaspoon of oil in a pan and sauté the onions until they are soft. 4. Add the tomatoes and cooked until softened. Remove from the heat. 5. In a medium bowl, mix together the oatmeal, the cooked onion and tomato mixture, broccoli, and salt and pepper. 6. Spread the mixture evenly into the greased baking dish. 7. Top with the shredded cheese (optional). 8. Arrange the bread slices on top of the oatmeal mixture. 9. Drizzle 1 teaspoon of oil on top of the bread slices. 10. Bake for 20 minutes. 11. Let cool for 5 minutes before serving.
