Step 1: Preparation
Cook the brown rice ahead of time. In a mixing bowl, combine the cooked brown rice, silken tofu, and the egg. Mash the tofu with a spoon or whisk until it incorporates with the egg to form a creamy, thick consistency.
Step 2: Add Greens
Wash and finely chop the spinach. Fold the spinach into the tofu mixture. Season with a tiny pinch of salt and pepper if desired.
Step 3: Assembly
Transfer the entire mixture into an oven-safe baking dish or ramekin. Spread it out evenly. Sprinkle the 20g of low-fat mozzarella cheese over the top.
Step 4: Baking
Preheat your oven or air fryer to 180°C (350°F). Place the dish inside and bake for 15 minutes until the cheese has melted and formed a beautiful golden-brown crust.
