
Steps
- Preheat oven to 375°F.
- Place bread in a food processor and mix until a fine crumb forms.
- Heat a frying pan over medium-high heat and melt 1 tablespoon of butter.
- Peel and dice onion and add it to the pan. Cook until onion is softened and lightly browned.
- Peel and cube potatoes and add them to the pan. Cook until potatoes are tender, about 15 minutes.
- Add remaining tablespoon of butter to the pan and stir until melted.
- Add bread crumbs to the pan and mix to combine.
- Spread the potato mixture into a greased 9x13 baking dish and sprinkle with cheese.
- Bake in preheated oven for 30 minutes until cheese is melted and breadcrumbs are golden.
- Let cool before serving.
