Steps
1. Heat olive oil in a large pot over medium heat.
2. Add the carrot and sweet potato, and stir to combine.
3. Saute for 5-7 minutes, stirring often.
4. Add the herbs, vegetable broth, salt, and pepper.
5. Bring to a boil, then reduce the heat to low.
6. Simmer for 10 minutes or until sweet potato is very tender.
7. Use a hand blender to blend soup until desired creamy texture reached.
8. Serve hot and enjoy.
