Carrot-Vegetable Stir Fry

1. Heat the olive oil in a large skillet over medium heat. 2. Add the onion and sauté until it is lightly browned, about 5 minutes. 3. Add the garlic and ginger and cook for an additional minute. 4. Add the carrots and green beans and cook for another 5 minutes, stirring frequently. 5. Add the soy sauce and season with salt and pepper to taste. 6. Cook for an additional 5 minutes, until the vegetables are cooked through and lightly browned. 7. Serve warm.
