1. Heat the butter in a large skillet or wok over medium-high heat. 2. Add the beef strips and cook until browned. Remove from the skillet and set aside. 3. In the same skillet, add the julienned carrots and cook until slightly tender. 4. Push the carrots to one side of the skillet and pour the beaten eggs onto the other side. Scramble the eggs until cooked through. 5. Return the beef to the skillet and mix well with the carrots and eggs. 6. Sprinkle the grated cheese over the beef mixture and cover the skillet. Allow the cheese to melt. 7. Serve hot and enjoy!
