Cheesy Chicken & Tomato Wrap with Egg

Steps

1. In a skillet, heat the olive oil over medium heat. 2. Add the diced tomato and cook for 2-3 minutes until softened. 3. Push the tomatoes to one side of the skillet and crack the egg into the other side. Cook to your preferred doneness (sunny-side up or scrambled). 4. While the egg is cooking, add the shredded chicken to the tomatoes and season with salt and pepper. Stir to combine and heat through. 5. Place the tortilla on a plate and layer the chicken and tomato mixture in the center. 6. Top with grated cheese and the cooked egg. 7.
