Steps
1. Heat vegetable oil in a pan over medium heat.
2. Add onions and sauté until translucent.
3. Add carrots and bell peppers, and cook for 3-4 minutes until slightly tender.
4. Stir in broccoli florets and cook for another 2-3 minutes.
5. Season with salt and pepper.
6. Sprinkle shredded cheese over the vegetables and cover the pan with a lid.
7. Cook for 1-2 minutes until the cheese is melted.
8. Remove from heat and serve hot.
