Chinese Apple and Broccoli Salad

A healthy and refreshing Chinese salad made with crunchy apples, tender broccoli, and a delicious clam and corn dressing.

Steps

1. Preheat the oven to 350°F (175°C). Cut the bread slices into small cubes and spread them on a baking sheet. Bake for about 10 minutes or until golden and crispy. 2. In a medium pot, bring water to a boil and blanch the broccoli florets for 2-3 minutes until tender. Drain and set aside. 3. In a small saucepan, steam the clams until they open. Remove from the shells and set aside. 4. In a large mixing bowl, combine the apple (sliced or cubed), broccoli, clams, and corn kernels. 5. Prepare the dressing by combining the ingredients listed below. Pour over the salad and toss gently to coat. Clam and Corn Dressing: - 2 tablespoons soy sauce - 1 tablespoon rice vinegar - 1 tablespoon sesame oil - 1 tablespoon honey - 1 clove garlic, minced - 1 teaspoon grated ginger 6. Serve the salad topped with the crispy bread cubes for added texture and enjoy!
