Steps

1. Rinse quinoa under cold water. Cook quinoa in 2/3 cup water until fluffy, about 15 minutes. Let it cool. 2. In a small bowl, whisk together olive oil, honey, salt, and pepper to make the dressing. 3. In a mixing bowl, combine cooled quinoa, orange segments, grapefruit segments, cucumber, and chopped mint. 4. Drizzle the dressing over the salad and toss gently to combine. 5. Top with toasted almonds before serving.
