Coconut Curry with Vegetables

A flavorful and aromatic coconut curry packed with fresh vegetables. This vegan dish is perfect for a quick and healthy weeknight dinner.

Steps

1. Heat the vegetable oil in a large pan over medium heat. Add the diced onion and minced garlic, and sauté until they become soft and fragrant. 2. Add the curry powder, cumin, coriander, turmeric, and cayenne pepper (if using) to the pan. Stir well to coat the onions and garlic with the spices. 3. Pour in the coconut milk and vegetable broth. Stir to combine everything together. 4. Add the mixed vegetables to the pan and season with salt to taste. Cover the pan and simmer for 10-15 minutes, or until the vegetables are tender. 5. Serve the coconut curry over cooked rice, garnished with fresh cilantro.
