Steps
1. Peel and chop the potatoes into chunks.
2. Place the potatoes in a pot, cover with water, and add a pinch of salt.
3. Bring to a boil and cook for about 15 minutes, or until the potatoes are tender.
4. While the potatoes are cooking, roast the garlic by wrapping it in aluminum foil and baking at 400°F (200°C) for 20 minutes.
5. Drain the potatoes and return them to the pot.
6. Add the roasted garlic, butter, and heavy cream to the potatoes.
7. Mash the mixture until smooth and creamy. Season with salt and pepper to taste.
8. Serve warm, garnished with chopped chives if desired.
