
Steps
- Peel and chop the potatoes into chunks.
- Place the potatoes in a pot, cover with water, and add a pinch of salt.
- Bring to a boil and cook for about 15 minutes, or until the potatoes are tender.
- While the potatoes are cooking, roast the garlic by wrapping it in aluminum foil and baking at 400°F (200°C) for 20 minutes.
- Drain the potatoes and return them to the pot.
- Add the roasted garlic, butter, and heavy cream to the potatoes.
- Mash the mixture until smooth and creamy. Season with salt and pepper to taste.
- Serve warm, garnished with chopped chives if desired.
