Steps
1. In a bowl, mix Greek yogurt, olive oil, lemon juice, garlic powder, salt, and pepper to create the marinade.
2. Add the chicken breast to the marinade, coating it well, and let it sit for at least 30 minutes.
3. Preheat a grill or skillet over medium heat. Cook the marinated chicken for about 6-7 minutes on each side, or until fully cooked.
4. While the chicken is cooking, prepare the bowl by placing the mixed greens at the bottom.
5. Once the chicken is done, slice it and place it over the greens.
6. Top with cucumber slices and sprinkle with fresh parsley.
7. Drizzle some extra yogurt sauce on top if desired, and enjoy!
