- In a bowl, mix Greek yogurt, olive oil, lemon juice, garlic powder, salt, and pepper to create the marinade.
- Add the chicken breast to the marinade, coating it well, and let it sit for at least 30 minutes.
- Preheat a grill or skillet over medium heat. Cook the marinated chicken for about 6-7 minutes on each side, or until fully cooked.
- While the chicken is cooking, prepare the bowl by placing the mixed greens at the bottom.
- Once the chicken is done, slice it and place it over the greens.
- Top with cucumber slices and sprinkle with fresh parsley.
- Drizzle some extra yogurt sauce on top if desired, and enjoy!
