Herb-Crusted Turkey Breast with Garlic Mashed Potatoes

Steps

1. Preheat the oven to 200°C (390°F). 2. In a small bowl, mix olive oil, minced garlic, rosemary, thyme, salt, and pepper. 3. Rub the herb mixture all over the turkey breast. 4. Place the turkey breast on a baking tray and roast for 25-30 minutes or until the internal temperature reaches 75°C (165°F). 5. Meanwhile, peel and chop the potatoes into chunks and boil them in salted water until tender (about 15 minutes). 6. Drain the potatoes and mash them with milk and butter until smooth. Season with salt. 7. Let the turkey rest for 5 minutes before slicing. 8. Serve the sliced turkey breast alongside the garlic mashed potatoes.
