Cucumber and Avocado Salad

Steps

1. Slice the cucumber into thin rounds and place them in a bowl. 2. Cut the avocado in half, remove the pit, and scoop out the flesh. Cut it into cubes and add it to the bowl with the cucumber. 3. Add the red onion, cherry tomatoes, and cilantro to the bowl. 4. In a separate small bowl, whisk together the lemon juice, olive oil, salt, and pepper. 5. Pour the dressing over the cucumber and avocado mixture and gently toss to combine. 6. Let the salad marinate in the refrigerator for 15 minutes before serving. 7. Serve as a main dish or as a side with grilled chicken or fish.
