Steps
1. In a bowl, combine olive oil, oregano, basil, garlic powder, salt, and black pepper. Rub the mixture all over the chicken breast.
2. Preheat grill to medium-high heat. Grill the chicken breast for about 6-8 minutes per side, or until cooked through.
3. Meanwhile, preheat the oven to 400°F (200°C). Toss the cherry tomatoes, zucchini, red bell pepper, and red onion with balsamic vinegar in a baking dish. Roast for 15-20 minutes, or until the vegetables are tender.
4. Slice the grilled chicken breast and serve it with the roasted vegetables. Garnish with fresh parsley.
